Adams Distillery Story
The journey began in 2016, just south of Launceston, Tasmania, at the Glen Ireh estate in Perth. Friends Adam Pinkard and Adam Saunders united to turn a whisky dream into a reality with a functioning single malt whisky distillery. Fueled by a shared vision, ambition, and innovation, the Adams embarked on a whisky exploration adventure.
The Tasmanian craft whisky community was a wellspring of knowledge, with experienced distillers eager to share their insights and experiences. This camaraderie inspired the Adams to further their goal of establishing a prominent craft whisky enterprise at Glen Ireh. With Professor Bernie’s addition to the team, they broadened their spirit selection to include dry gin and navy strength turbo gin.
Tragedy hit in February 2021 when a fire ravaged the distillery, reducing it to ashes and shattered dreams. Miraculously, the aging whisky stocks remained unscathed. Bolstered by new investors, the team pledged to rebuild, their determination reinforced when Adams Peated Port Slosh cask earned the title of best Australian single cask malt at the 2021 World Whiskies Awards, among other accolades and medals at the World Whiskies Awards, World Gin Awards, and a mention in the esteemed Jim Murray Whisky Bible.
Adams Distillery has triumphantly emerged from the ashes, embarking on a new chapter with invigorated energy and a vision to broaden its range of premium craft whiskies, gins, and other spirits, now available across Australia and in select international markets.

With ex-Bourbon casks forming the base of this Single Malt Whisky, we have spiced up and enhanced this Signature Series by hand-selected ex-Port, Sherry, Maple Syrup, Tipo Jerez, and Pinot Noir casks; these casks balance this Whisky with some exciting points of difference. This diverse range of casks developed multiple layers to explore, enjoy and showcase what Adams Single Malts are known for.
Adams Signature series is the staple of Adams Whiskies, created to give an easy drinking and approachable pour for every occasion. This Whisky is rare in its ABV, there are two sweet spots, 42% ABV and for those more daring 59% ABV.
Tasting Notes:
Aroma – Hints of Christmas pudding, allspice, and dried fruits lead to glimpses of cracked vanilla bean and burnt orange peel, bold, rich, and sweet on the nose.
Palate – A gentle, soft mouthfeel with Bright citrus and chocolate, mid-way getting a tasty Sherry spice influence and a balance of Oak coming in with some sweet maple delight.
Finish – Moving from front to back giving a well-rounded and balanced finish, gingerbread and creamy caramel linger giving a long length to each mouthful.
