Wood Duck Spice tries to make that a bit easier for everyone.

Using the tastiest herbs and spices Tasmania and the world have to offer we toast, roast, grind, blend and mix specialty herb and spice blends to take your next meal to the next level.

And make it simple.

At Wood Duck Spice we grow it if we can, source it locally and organic whenever possible, and make sure that our overseas exotics come from ethical sources.

Wood Duck Spice blends are ALL SPICE.  Freshly roasted and ground as required.

No preservatives, no fillers, no anti caking agents.

This guarantees the richest flavours and no nasty surprises.

However you do need to store your Wood Duck Spice out of direct light and occasionally give them a little shake or stir to loosen them up if they’ve settled in the jar.

Packaging is reusable, recyclable or compostable (yes even those ‘plastic’ bags the spice refill blends come in. They are actually made from cellulose, a wood pulp fibre)

Wood Duck Pickling Spice makes it wonderfully easy to create crunchy, flavour-packed pickles at home — with maximum yum and minimal fuss.

Perfect for all your pickling needs, especially onions, but equally delicious with French shallots, cucumbers, beetroot, cauliflower, or carrots.

Enjoy crisp, organic pickles all year round — ideal for cheese platters, sandwiches, grazing boards, or beautifully jarred gifts to wow family and friends.

Simple Pickled Onion Recipe

Ingredients

  • 1 litre vinegar

  • Up to 2 kg small onions (not exact — use what you have, from 500 g to 4 kg)

  • 200 g sugar or honey

  • 20 g Wood Duck Pickling Spice

  • 2 tablespoons salt

Method
Peel the onions and place them in a non-metallic bowl. Add the salt, cover with iced water, and leave for at least 4 hours or overnight. Drain well.

In a saucepan, gently heat the vinegar, sugar (or honey), and Wood Duck Pickling Spice until the sugar dissolves.

Pack the drained onions tightly into sterilised jars. Pour the hot pickling liquid over the onions, seal, and store in a dark cupboard.

Allow a minimum of two months before opening for best flavour.

Tip: Any leftover pickling liquid can be stored in a sealed container in a dark cupboard and reused.
