Chris is a locally grown Tassie boy with a love of the environment and all things Tasmanian.

Looking for something new way back in 2015, Chris got this pepperberry thing rolling. With a degree in Agriculture and a PhD in microbiology, he ditched his lab coat for an apron, his pipette for a picking ladder, and strode out in search of Tasmanian Pepper.

Chris believes in this industry because pepperberry is Tassieā€™s very own and is borne out of beautiful natural places that he loves.Ā  He is more passionate than ever about this young industry and is continuing to expand his vision for sustainably managing wild harvest of pepperberry.

Chris is supported in this venture by his partner Anna. Together they are busy propagating pepperberry plants for enrichment planting on their property in the Southern Midlands, Tasmania and raising a toddler who is showing early aptitude for all things pepperberry!

Bush Jelly combines bush spices with a traditional quince jelly.Ā  The result is amazing! It is a versatile product for serving with cheese, yogurt, desserts or as a salad dressing or marinade base.

Curiously our hand crafted Bush Jelly barely made the cut when we were developing new products in 2017.Ā  It is so unique that it was kind of difficult to make on a larger scale!Ā  But make it we did. And our efforts were well rewarded. It won THREE awards at theĀ Royal Hobart Fine Food Awards, including the Champion medal, and Best in Sweet Preserve category atĀ Australian Fine Food Awards! The highest accolades of any of our products!

Taste of the Australian bush itself!

Bush jelly is a trio of Tasmanian quince, pepperberry and lemon myrtle.Ā  We harvest our own native pepperberry to bring you something special from the Tasmanian wilderness ā€“ read more about ourĀ pepperberry harvest.Ā  Pepperberry adds richness, complexity and a vibrant red colour to the quince jelly.Ā  Australian native Lemon myrtle makes this jelly oooh sooo lemony!

Quinces come from backyards around Hobart. You canā€™t get more local than that.Ā  Every home gardener knows ā€“ home grown is better.

We seriously doubt that Bush Jelly will last long in your pantry

It is such a versatile product.

Use in a cheese platter.

Use it like you would cranberry jelly ā€“ the crisp fresh flavour cuts through cold meats beautifully, or adds a fragrant fresh dimension to a ham glaze.

Stir it through yogurt, porridge, desserts,Ā use in a marinade base.

Mix with olive oil and a pinch of salt to make a vibrant sweet salad dressing.
