“WE HAVE BUILT THE ROLLS ROYCE OF WHISKY DISTILLERIES. BY RESPECTING AND UNDERSTANDING OUR PAST, WE HAVE FOUND OUR FUTURE.”
– John Ibrahim
STORY OF THE MILL
John Vincent established a number of pubs and hotels in the area, and of course his illegal distillery could supply those establishments. Initially he struggled to find a miller – it wasn’t until 1840 that he found one and was able to open the mill commercially.
The mill precinct was leased from 1837 onwards. There was a piggery, a stable, a barn, a storage area to store supplies and a granary for the grain.
“THE MAJESTIC WINDMILL WAS THE LATEST TECHNOLOGY OF ITS DAY IN THE 1800’S. IN 2021 WE HAVE BUILT A STATE OF THE ART WHISKY DISTILLERY, USING THE LATEST TASMANIAN TECHNOLOGY. CALLINGTON MILL DISTILLERY REPRESENTS CUTTING EDGE WHISKY MAKING FOR THIS CENTURY. WE FOUND OUR FUTURE BY UNDERSTANDING OUR PAST.”
– John Ibrahim
